Acacia (gum Arabic) is obtained from the sap of acacia Senegal tree which usually is yellow-red in color and water-soluble as well. Gum Arabic used as a stabilizer in food industry consists of saccharides and Glycoproteins which are extracted from the two species of acacia named; “Senegalia Senegal” and “Vachellia Seyal”.
