CMC
Carboxymethyl Cellulose (CMC) is a thickener, binder and stabilizer in a variety of foods and is one of the popular food additives and ingredients in most countries, it is considered a fiber source and as such is used in over-the-counter laxatives.
CMC has the functions of thickening, suspending, emulsifying, stabilizing, shaping, filming, bulking, anti-corrosion, retaining freshness, acid-resisting, health protecting, etc. It can replace the application of guar gum, gelatin, agar, sodium alginate and pectin.
